Chicken Perattu


Chicken -10 medium pieces
Lemon juice from one small lemon
Ginger as per requirement
Garlic 12 nos
Onion 4 big ones
Tomato a small one
Red chilli powder 3 tablespoon
Coriander powder 1.75 tablespoon
Turmeric powder half tea spoon
Garam masala one and a half teaspoon
Fresh pepper powder 1 teaspoon
Salt as per requirement
Butter 100 gm/ghee 50 GMs
Oil for saute as per requirement

Saute onion,ginger,garlic and tomato in a pan using 2 tablespoons of cooking oil.add salt.when its color fades, add chilli powder,coriander powder,turmeric powder,garam masala and pepper powder.stir.grind it in mixer.mix this paste with chicken.add lemon water.mix well.let it be there for 15 minutes.cook it in a kadai or pan in medium low flame with out using water.if required,add small amount of water and mix well.make small digs in this mixture from top to bottom of the pan as heat transmits from top to bottom.cook it until it is partially cooked and becomes semi dry.
Add butter or ghee with three tablespoons of oil in another pan.add chicken mixture into it saute well. Close with a lid I’m medium heat.stir it frequently until all the partially cooked chicken into fully cooked. Serve hot with ghee rice,chappathi,pathiri
