Carrot Payasam
Ingredients
Carrots -3 to 4 medium size
Milk – 1 1/2 litre
Sugar- 1 cup
Ghee- 2 table spoon
Cardamom – 4
Saffron – few strands
Raisins and cashews
Preparation
In a thick bottomed pan saute grated carrots untill the raw smell goes. Then add half of milk and cook well.
Grind cashews ( roasted in ghee) and cardamom seeds with little sugar and keep it aside.
Once the carrots cooked well add sugar and the remaining milk. Make it boil. Then add the ground mixture. Switch off the flame, add saffron and garnish with raisins and cashews . Serve hot or chilled.
